I use a Yoder Pellet Smoker.
Heat at 235° for 1 hour. After that I raise it to 350° until the bird is about 130° around the thighs. Once that happens I raise the temp to 450° until is fine.

I do all my seasoning before putting the bird inside the smoker, once inside I don’t open the lit at all until is completely done.

    What kind of pellets? How did you brine it? Can we get a cross section pic?
