First time we did smoked turkey. 27 lb bird spatchcocked. Did a wet brine for about 12h and put on the smoker way too early but was able to slow it down and turned out really well.

    *What seasoning did you use?

*How long did you cook it, and at what temperature?

*Did you use any special tricks or techniques?

I smoked mine last year, hit the skin with a blowtorch when I pulled it off the smoker. It was great. Smoked taste and crispy skin

Smoked my first turkey today too and it came out great. Wish I could have gotten some more color though. Love the color on yours. I also spatchcoked mine.

This is the first year I smoked mine. I put my bird in, while it was still frozen. At about three hours, I pulled it, spatchcocked it, spiced up the skin, and put it back in. Took about another four hours. 13 pound bird.

If I was to do it again, I would have separated the legs/thighs from the body. That area of the breast between the thighs and breast took longer to cook, than the rest of the bird.

Still, the best turkey I ever made!

What temperature did you cook yours?
