I came into work again today and followed your guys’ advice for rescuing my lovely split toffee sauce:
– Reheated it slowly while whisking vigorously and frequently
– Took it off heat once at temp and whisked in ice water to bring it together (?)
– Transferred to shallow metal hotel pans (not cambros) and cooled at room temperature (not in an ice bath) for ~1 hour, whisking every 10ish minutes to break up solids
– Finished the cooling process in the walk-in, continuing to whisk occasionally

Many thanks from a grateful and learning saucier, I shall follow your guys’ advice once more for when I make it again 🤙
