    I swear to god I have bought the ingredients for this three times and every time my ingredients get cannibalized to make something else. One time we used the tomatoes for spaghetti, another time the bell peppers for fajitas. I think we used the eggs for an emergency omelette and buttermilk biscuits because we had a random group of people show up.

    Yum! We sometimes top ours with crumbled feta and Kalamata olives.

    Made this last night although I skimped on the coriander and we didn’t have any cilantro. Still a great meal, just a little duller. Made Stella’s yogurt based biscuits to go with it. You’re looks great.

    If you want to try a similar dish, Mexican salsa poached eggs are also amazing.
