Made a creamy red wine pan sauce to go with it. I think I could have kept it out on the counter longer before cooking, may have reduced grey band but I think this is still close to the best steak I've ever cooked.

    If you want normal person input, the steak looks delicious and I would feel lucky to have a friend cook it for me 🙂

    If you want r/steak min/max advice, it looks like you seared pre-seasoned and in butter instead of high heat searing to maximize crust before butter basting and throwing in herbs at low temp.

    The sear before season and baste approach allows for maximizing crust, avoiding torching any seasonings/aromatics and burning butter (very distinct from “browned butter”), and allows you to get the most out of these two parts of the process that can harm each other when combined.

    Put the r/steak hat on, and rejoice in impressing friends and family while perpetually feeling inadequate and unhappy with how your steak turned out. (/s kind of?)

    People hatin on the smothered in sauce but I’m about that. I’d crush the right side first then use the leftover plate sauce as dipping for the rest. Saw you have an 18 month old as well. Keep it up cuz you did great and it looks great. 3yo and 18mo myself, cooking is stressful lmao.
