First a tantanmen, second a last minute mushroom shoyu and lastly a cheat paitan.
When the Chintan broth is ready the last third of the broth is really hard to pull without disturbing the bones and making it cloudy, in this case I wanted to go fast so I chose to pull it out fast, add most of the top layer of fat and a packet of neutral gelatin and here you have it, a cheat paitan.

Chintan and paitan mean “clear soup” and “white soup” respectively. The third one is technically not a chintan.
