    I’d say more importantly remain calm and try to cover that thing with another larger pan as carefully as possible.

    btw for context, we have a 2 top burner that sits in the prep area behind the line so it’s out of sight. when we get Pittsburgh style steaks they have to be cooked on a pan in the back, so i can’t fully watch them. someone who was supposed to be watching it forgot about it and viola. i had a server have to come up to me on the line to get my help

    I know OP says there’s no Ansul, but it’s clearly in the pic, just piped wrong. Judging by this pic, it was less than 30 seconds away from making it a real bad day.
