changed way too many things this time i was worried that it would have bad rise but ended up getting the best oven rise so far:

  • changed starter ratio to half of previous recipe since i wanted to bake 2 loaves
  • did only 1/3 (or less) the stretch and folds since i had to go to sleep and it was getting late
  • room tempt proofed overnight
  • baked on the lower rake in oven
  • used more boiling water for steam
  • preheated only 5 min instead of 15

Recipe:

700g bread, 150g sifted ww
580 water
100g starter **
20g salt

room tempt 23-24 cel

mix 15 min & rest 45min
5 s&f every 5mins for 2 sets
bulk til 100% growth (total 9 hrs counter overnight)
final shape
cold retard 4.5 hour
220 preheat for 5 min
200 bake for 40 min
250 bake for 5 min (for colour)

    I don’t know why it bothers me so much that they’re oriented differently on your tray, and only one of them has parchment.
