I serve this usually as a breakfast or lunch on the weekend after Thanksgiving. When prepping my stuffing I hold back about 5-6 mushrooms to use for this dish.
6 mushrooms sliced
1 clove garlic minced
1/2 cup or more of shredded turkey (dark meat is great in this dish)
3 TBS butter
1-2 TBS flour
approx. 3/4 cup milk
approx 1/2 cup cream
salt, pepper, any leftover fresh herbs or seasoning
In a skillet brown mushrooms in the butter. Add garlic and leftover turkey and let warm for a few minutes. If the mix is dry from mushrooms soaking up the butter you can add another TBS. Sprinkle flour over top and styir together well. Toast the flour for a few minutes and then add milk. Stir immediately. Add cream. Add more milk and cream as desired to get it to the consistency you like.
Serve over toast, english muffins, leftover rolls or any starch you have on hand.
edit: if you don’t have cream just using milk is fine. The cream adds more richness but I’ve made it without the cream too.
