I have a friend who is allergic sensitive to all things cow. I am really into cheese sauces and queso. Do you have any recommendations for goat or sheep cheeses that would melt and incorporate into sauce or queso? Do you like goat milk in your queso?

Using this recipe as a base, I tried using oat milk and condensed oat milk yesterday, with havarti and cheddar. Just to test a non dairy base option. I didn't like it. The condensed oat milk had an under taste that was off for me. But my husband said it was fine. I need to try just oat milk next. Then move on to some non cow cheese tests.
