
I bought a 21QT Sears Pressure Cooker and Canner Model 620.212 at an estate sale last year. Overall it looks to be in great condition, but I know it's missing some parts and I'm nervous about where/what to buy. I've been wanting to start canning for a while, but it's nerve-racking when I don't really know what I'm doing (despite reading so, so many articles).
Really all I know I need is a sealing ring and probably a canning rack (there's a basket already inside the canner). Do I need to get a new steam gauge? Pressure regulator? Vent pipe? Note: I tried to pull and twist off the current pressure gauge and it seems pretty well stuck, but I have terrible hand strength and was worried about breaking it off.
So far I'm eyeing buying parts from Pressure Cooker Outlet or Red Hill General Store. Are these reputable shops?

If you’re in the US I would strongly encourage you to take the canner to your local extension office, they can inspect it first hand and see what does or doesn’t need replacing to make sure that you’re safe!
