This chimichurri is perfect for the holidays or any day!
It may not be traditional, but it’s simple, delicious, and goes with everything. It’s great not only on meats, seafood, or tofu, but also as a dressing over roasted vegetables for a zesty finish. Use it as a killer dip for crusty bread, or toss it with pasta for a quick and flavorful dish. Our family especially loves it with steak and lamb chops!

Chimichurri can last up to 7 days in the refrigerator. If you want to store it for up to 3 months, freeze it in ice cube trays and transfer the cubes to an airtight container once frozen. Just thaw portions as needed for use.

Hubby’s Famous Chimichurri
• 1 cup flat-leaf parsley, chopped
• 1/3 cup cilantro, chopped
• 2 tsp dried oregano
• 7 garlic cloves, chopped
• 2 shallots, chopped
• 1 red chili or 1 tsp dried red pepper flakes
• 1 tsp salt
• 1/2 tsp pepper
• 1/3 cup red wine vinegar
• 2 Tbsp lemon juice
• 1 1/3 cup extra-virgin olive oil

Mix well and let it sit for at least 15 minutes before serving. Enjoy!
