Is the floating stuff okay for turkey stock? I cooled my stock and skimmed fat as well as I could before rebliling and pressure canning per canner instructions

One can some air bubbles seeped out for about 30 seconds but no liquid escaped and seems to have resealed itself, is that safe to keep canned or should I use that jar soon (see second photo)

    *maybe*

My stock looks like that and I eat it. I do make sure to boil it for 5 minutes after opening.

I know that in the usda home canning guide they say stock should be clear and free of sediment.
