This was a birthday/Christmas cake for my dad. He requested a chocolate maple cake.
So it’s a chocolate chiffon cake, with a whipped mascarpone, maple cream, chocolate ganache, and bark coating decorated with Swiss meringue mushrooms, candied cranberries, and rosemary.
