Last month I got a thing of braunschweiger and introduced my partner to its funky goodness. I was doing Wasa crackers-smear of mustard-braunschweiger-white onion-cracked black pepper. It makes a great bedtime snack if you don’t mind having to double brush your teeth to get the onion flavor out.

If the bread was fried in butter on one side or at least toasted then this would be excellent bet. Even just bread would be fine too, but the crispness factor would really bring it together.

Braunschweiger is one of those things that I go “man you know what I haven’t had in a long time?” Then I get it and I make a couple sandwiches and they’re good. Then it sits in the fridge and I throw it out and then in a few years the cycle repeats.
Same with fosters. “Man, I haven’t had an oil can of fosters in awhile!” I get an oil can and take a sip, “man this stuff is awful…” a year later the cycle repeats.

It’s been a lonmg time since I’ve had Braunschweiger. When I lived in St. Louis it was very popular there. Here in NYC I’ve never even seen it in 7 years.

My grandma used to make me braunschweiger on pumpernickel toast when I would come to visit every weekend. It was usually devoured while watching Dallas and Falcon Crest with her. I still hate liver but love braunschweiger, yeah it doesn’t make sense to me neither!
