Bacon Brussel Sprouts
Ingredients:
1 lb. organic brussel sprouts, end trimmed, cut in half and/or quarters
4 slices bacon, nitrate free
Salt and pepper to taste
¼ cup freshly grated parmesan cheese
2 tsp. Fresh lemon juice

Directions:
Rinse and trim the brussel sprouts. Slice the smallest amount you can off the stem of each sprout. Doing this will minimize the number of leaves that fall off the sprout. Try to use sprouts of a similar size if you can choose them. This will ensure that they cook more evenly. Cut the sprouts in half or quarters depending on how big a sprout is. Set the sprouts aside while we cook the bacon.

Place the bacon in a large cast iron pan. Using cast iron works best, in my opinion, in order to achieve that beautiful golden brown and caramelization that occurs. Cook the bacon on medium low heat, turning frequently until it is browned and crispy. Place the cooked bacon onto a paper towel covered plate to cool. Once cool chop bacon into bite size pieces.

In the same pan with the bacon grease, toss in the brussel sprouts and season with salt and pepper. Toss to coat and then cover and cook over medium heat for about 10 minutes, stirring occasionally . You may need to lower the heat depending on how hot it gets.

Test for doneness using a fork and cook for an additional 5 to 10 minutes or until the sprouts are golden brown and fork tender.

Serve the brussel sprouts into a serving dish and drizzle a couple of teaspoons of fresh lemon juice followed by the bacon and toss. Then finish it off with some grated fresh parmesan cheese.

I love these recipes! I definitely want to try this recipe as well. I had Brussels sprouts last week. I added them to rice and added cheese. It tasted very similar to Broccoli 🥦 Rice 🍚 and Cheese 🧀 casserole. They are great when you don’t have broccoli.
