MAKES 12 COOKIES
APPLE SAUCE
300g Bramley Apples
100g Butter
100g Light Brown Sugar
2 tsp Cinnamon

OAT CRUMBLE
80g Plain Flour
20g Rolled Oats
10g Caster Sugar
10g Demerera Sugar
40g Melted Butter
Pinch of Salt

COOKIE DOUGH
230g Butter (Cold)
160g Light Brown Sugar
160g Caster Sugar
200g Caramelised Chocolate
200g White Chocolate
500g Plain Flour
2 tsp Baking Powder
1 tsp Salt
1/2 tsp cinnamon
50g Oat Crumble
2 eggs

Roll cookies in remaining Oat Crumble

  2. Gonna make these without the oats (allergic). I'll substitute with extra flour or toasted desiccated coconut. Looks like a winner!

  3. Sometimes you guys cream the butter on its own first, and then add the sugar to cream together. Other times like this one you start with the butter and sugar together. Is there a big difference between each way?

  4. If I don’t want it to be too sweet, can I cut down on the sugar in the cookie dough or cut down on the chocolates or can I cut down on both? If so, by how much?

  5. I don’t buy light brown sugar any more I up the white and use dark. I can’t believe I haven’t seen this in the book I need to make these thanks guys !!!

  7. I've made a similar flavor, but I used applesauce as the binder instead of egg, also added chopped dried apples and walnuts instead of chocolate. Then rolled them in demerara sugar.
