I have a small amount of thai chilis from a plant I grew that I wonder if I can grind up and mix with kosher salt for future use.

I basically harvested them and placed them on a small plate to dry out.

This is where I'm stuck. I don't have a dehydrater but the Peppers are dry to the touch, dried on my kitchen counter, and it's been about 3 weeks now.

What would you recommend?

    That’s actually a fair amount of Thai peppers, they’re p spicy. Can make a little chili vinegar or chili pepper water still with the dry ones but I think both are pepper with fresh.

  2. Maybe some chili oil also, it won’t take many peppers to spice up a nice jar of oil!

  3. Thai chili is pretty good when blended with vinegar, salt and lime. Works as general purpose hot sauce with pretty much anything.
