Miso Soup: Snack Size! 109 cals, 16g protein

  1. 1/4 cup frozen edamame, some chopped kale, 1/4 tsp ground ginger, a sprinkle of turmeric, 1 Tbsp each of miso paste and furikake, 3 ounces of tofu. Added boiling water when I was ready to eat and stirred until the miso paste was fully dissolved!

    Only thing I’ll change for next time: the kale was too bitter, so I’ll skip it. Otherwise this was a great snack, warming and filling.

    Looks great!! I’ve tried to make miso soup at home but it never turns out quite like at the sushi restaurants 🥲
