I’ve always made them with ground turkey, due to not being able to find turkey thighs in my area.

Since boneless/skinless chicken thighs are readily available, I’m wondering if they would work as a substitute?

Has anyone ever tried this?

    Ground turkey has more fat than boneless, skinless chicken thighs. I’d keep that in mind.

    Big respect to Kenji, but discarding MSG ‘just because’ is bad food science. And not the first time he’s ignored that some people are much more sensitive to the flavor “fishy” and would find that anchovies ruin a burger.

    You can absolutely make a chicken burger and add some MSG to make it meatier, whether straight or a mix of other MSG-bearing foods.
