Namely, I flipped more regularly at higher heat and weighed down the steaks with another pot/pan for a more consistent crust. Really happy with the results! This was also on a non-stick pan (not my kitchen), which is a promising sign for when I can use my cast iron

Hi OP, I also like using a cast iron weight instead of a pan itself, they sell them in Target for $20 🙂
