    but added a lot more mushrooms and tomatoes for volume. I only used 1/3 cup of coconut milk per 7 cups of soup. Also, the only oil I used was spray oil for tofu and a dab of chili oil garnish.

    This is honestly one of the best tasting soups I’ve ever made. Worth the extra effort to get lime leaves, galangal root, lemon grass, and tom yum paste. **You don’t need all that and could just use the tom yum paste,** but the lemon grass, lime leaves, and galangal root are really flavorful.

    The Tom Yum paste I used is the same one in the recipe. Brand is Mekhala. Highly recommend it!
