Everything tastes better wrapped in lettuce, but this recipe takes it up a notch with a thin rice paper layer for a spring roll-inspired twist! Perfect for meal prep or a quick, satisfying meal.

Ingredients:

Chicken Thighs: 2 lbs

Seasonings: Smoked paprika, garlic powder, onion powder, thyme, cayenne, cumin, coriander, salt

Veggies: Iceberg lettuce, Persian cucumber, tomato, avocado, chives

Bacon: 8 oz (2 strips per wrap)

Ranch Dressing: Mayo, sour cream, buttermilk, apple cider vinegar, lemon juice, dried dill, dried oregano, garlic & onion powder

Rice Paper: 3 thin sheets (optional, can omit for low-carb version)

Directions:

1. Season & Cook Chicken: Marinate chicken thighs in oil and spices for 30 mins. Cook via grilling, air frying, or pan-searing.

2. Cook Bacon: Bake or air fry until crispy; drain on paper towels.

3. Prep Veggies: Wash lettuce, shred cucumber, slice tomato and avocado, and chop chives.

4. Make Ranch Dressing: Mix mayo, sour cream, buttermilk, vinegar, lemon juice, and seasonings. Adjust to taste.

5. Assemble Wrap:

Dip rice paper sheets in warm water (optional).

Layer lettuce, cooked bacon, chicken, veggies, and ranch dressing.

Fold tightly like a burrito, sealing with rice paper if using.

6. Enjoy: Serve with extra ranch for dipping.

This wrap is:
✅ Low-carb (omit rice paper for strict keto)
✅ Packed with protein & healthy fats
✅ Great for meal prep or on-the-go meals
