My husband is going to kill me tomorrow morning when he has to cut into this for sandwhiches 😂\
I never ger ears like this and it's fine by me. I'm guessing it happened because of the colder weather and it got less rise time. I couldn't let it go any longer because we need bread for tomorrow. The dough felt underproofed when I scored it. I guess we'll know better tomorrow when we cut into it.\
I'm used to making it all in one day and haven't quite figured out how to make it in this cooler weather. I can't remember what I did last year. \
Recipe-\
30 starter\
75 water and flour\
Next day when doubles- 150 starter
275 warm water\
25 olive oil\
500 flour (I did 450 white 25 whole wheat here) \
10 salt\
Stretch and fold 4 times whenever I remember and let rise. Bake. Eat.

They look cool and make for nice bunny pictures, but when it comes to enjoying a loaf, honestly, I’d rather not have one.
Beginner here. There’s more oven spring if you proof less? Nice loaf btw
It’s always flavor first with sourdough.
But ears usually mean crunchy loaves that are extra-flavorful.
