I purchased a jar of 3 bean chili mix from a local nonprofit. Mix contained dried black, kidney, and pinto beans, with some seasonings. I followed the instructions, simply dumping the jar in the crockpot with the additional ingredients for 8 hours on low. I make chili frequently, but never with dried beans. After we all ate some of the chili, we realized the beans had not fully softened, which I now realize is because the acid was added with raw dry beans. My concern is the kidney beans. We immediately stopped eating the chili due to undercooked kidney beans being toxic, and are hoping we don’t get sick. Is there anything I can do to save the pot? If we just pick out the kidney beans, is the remaining chili safe, or would the toxins have leached into it? If we boil the whole pot on the stove for 30 minutes, would it then be safe?

    Got a Ninja foodie or a pressure cooker. That’ll fix em, or boil while adding water until done.

    Cooking dry kidney beans in a slow cooker on LOW does not remove the toxins. Throw it out.

    I wouldn’t chance it. I never make dry beans without washing and soaking before putting them in the slow cooker.

  6. Of course they weren’t softened. Why wouldn’t you soak the beans overnight before using them?

    Follow up question … this mix is sold by an organization that helps disabled individuals start micro businesses. It was sold at a popular event run by another organization. Would you let the organization know? Let the event organizer know?

    Oh my! My wife didn’t know about the boil kidney beans thing. She knows now.

    I got home from a heavy, snowy day at work. I was frozen and starving. She had gone to watch grandkids overnight.

    I ate chili from slow cooker that was on low for 10 hours. Ate a lot of chili.

    I thought I was going to die. Too sick to drive 1/2 hour to hospital and roads were closing. 3 days of laying in the bathroom.

    If you put dry red kidney beans in a slow cooker for 8 hours on low, they do boil. Not as soon as you turn it on obviously, but they boil…quite a lot. I rinse them really well beforehand, but they go straight in with the garlic, onions, seasonings, etc…uncooked. I’ve done this for probably 35+ years & my mom did it my entire childhood. No one has ever gotten sick. I’ve never heard of this being an issue.
