πŸ₯™ This one recipe combines so many of my favourite things about Mediterranean cuisine: lightly spiced, yoghurt marinated proteins grilled to perfection. Tangy tzatziki packed with flavourful aromatics and a simple tomato, onion and parsley salad to add even more freshness, all sandwiched between a freshly toasted pita.

πŸ—The chicken is just as good fresh off the grill as it is served cold straight from the fridge the following day. Cannot recommend enough!

πŸ₯’ Ingredients
β€’ 500g Chicken thigh
β€’ 100g Delta Yoghurt
β€’ 25ml lemon juice
β€’ 25g Extra virgin olive oil
β€’ 15g Tomato paste
β€’ 20g Garlic, grated
β€’ 20g Ginger, grated
β€’ 3g Paprika
β€’ 3g Turmeric
β€’ 3g Cumin
β€’ 2g Cayenne
β€’ 2g Allspice

For the Tzatziki:
β€’ 1 cucumber, grated
β€’ 250g Delta Greek Yoghurt
β€’ 1 clove garlic, minced
β€’ 1 bunch of mint, chopped
β€’ Zest and juice from 1 lemon

For the Onion Salad:
β€’ 1 small bunch parsley, torn
β€’ 1/2 red onion, sliced
β€’ 250g cherry tomatoes, halved
β€’ Juice of half a lemon
β€’ Extra virgin olive oil (EVOO)
β€’ Chilli flakes (or my personal favourite, sumac, if you can find it!)
β€’ Pita bread

πŸ”₯ Method:
➊ Combine yoghurt, lemon juice, olive oil, tomato paste, garlic, ginger, paprika, cumin, cayenne, allspice, and turmeric together.
βž‹ Use this to marinate bite-sized pieces of chicken and allow to marinate for 30 minutes.
➌ For the tzatziki, grate or dice the cucumber flesh (not the seeds), season well with salt, and allow to drain over a strainer.
➍ In a bowl, add good quality Greek yoghurt, the strained cucumber, chopped mint, grated garlic, lemon zest, and lemon juice. Stir to combine.
➎ Finally, combine sliced red onion with torn parsley leaves, lemon juice, olive oil, salt, and chilli flakes (or sumac).
➏ Skewer and grill your chicken as well as some fresh pita.
➐ Use your pita to remove your chicken, top with plenty of sauce and onion salad, and enjoy immediately.

πŸ’‘ Pro Tip: For an extra burst of flavour, add a sprinkle of sumac and a drizzle of extra virgin olive oil on top of your assembled pita wrap. Sumac is a citrusy scented spice that adds a ton of flavour to a finished dish.”
