Second time making steak! Posted yesterday and was told it looked dry. Is this considered medium rare?

    Doesn’t look dry at all, it’s more medium for a less fatty cut I think that’s better, good job

    Would smash. But based on the color—- did you cook a cold steak right out of the fridge?

    Steaks should sit at room temp for 30 min before hitting the pan.

    Looks medium and v jucy up close; but the run-off is hidden by the potatoes. It still looks like a 9/10 for me.

    I always do a sauce; either white or from the pan. That way when you plate, the steak has some additional moisture, you have something for the mash potatoes besides butter, and you get a great-looking presentation. (And meat *always* dries out, especially when thinly cut.)

    Try one of the [Mother Sauces](https://www.youtube.com/watch?v=xniS7kMpW4I) or a basic [pan sauce](https://www.youtube.com/watch?v=yQa-1VQ0dGI) next time, and your plate game will be spotless.

  8. I was gonna say that this somehow looks both dry and medium.

    As long as you know not to over cook your steak however, you have potential!

    Edit: and I would eat this for sure. I think I’m just not used to medium.

  10. Looks good but your pan needs to be hotter to get a nicer crust on the outside. You should be cooking steak on cast iron or stainless steel that is smoking hot. Also look up the reverse sear method

    It looks like it was cooked on a very hot skillet to make the outside medium but the inside on the rare side.

    Inside looks good to me, but the crust seems underwhelming. Was it? Not sure what method you used to prepare, but give it a minute on each side in a ripping hot cast iron pan while basting with butter for a better crust. For an added delight, give it a pinch of finishing salt afterwards (big crystals).

    In any case, for your second steak, you should be proud.

    I thought it looked dry too at first glance. Then I realized the juice had run onto your mashed potatoes (bonus!). That looks like a really good meal!
