Reverse seared, brought to 121F in an oven @ 225F. Then seared in cast iron for ~45 seconds on each side and another 10 seconds around each edge. Seasoned with a chile+espresso rub I am fond of, served on top of a pan sauce made with garlic, Worcestershire, lemon juice, Dijon, and a little Dashi. Garnished with a little flaky salt.
