French Onion Chicken (with tweaks)

    This is such a good idea!

    Sadly, Hello Fresh leads people to believe they can caramelize an onion in 15 minutes and that you’d get enough to amount to anything from one small onion. I knew better, so I caramelized all onions I had in the house that were about to go bad, which took about 1.5 hours. Froze the rest for other HF recipes that call for them.

    I also had some mashed squash that needed to get used, so I mixed it into my mashed potatoes for a 50-50 blend with lots of misc. seasonings.

    Everything was done on the stove, as the oven isn’t necessary despite the recipe card.
