One of the best meals I've ever had was at an itameshi spot in Los Angeles. Itameshi is this insanely delicious mash up of Italian and Japanese cuisine that dates back over a century. Obviously LA has. a massive Japanese population so it's easier to find this kind of fusion cuisine, but I'm keeping my fingers crossed there's some place in the greater Chicagoland area doing this. Any one have any recommendations?
