Soup is the easiest bulk prep and I make a batch most weeks, especially in winter. This week is potato and leek at my husband’s request. Half for the fridge for lunches over the weekend and half for the freezer.

Cost €2.76 for 8 portions (€0.35 per portion) not including seasoning.
115 calories per portion.

Recipe is fry one large white onion in a small amount of oil, then add 3 sliced leeks and sweat. Cube up 1kg of potatoes and add with enough water to cover and any seasonings/stock cubes you want. Blend once the potatoes are soft.
