For anyone who has followed the Filipino popup by Chef Bryan Collante (Moody Tongue, Warlord, Eden, etc.) you know they took a couple of months off. They were back in full force at Common Decency this month on Wednesday and I thoroughly enjoyed the new menu. Here are my thoughts:
Bistek Burger (toyomonsi onions, black garlic sauce, peporoncini, Spanish milk bun) was really nice. I loved the umami from the onions and sauce with a little kick and crunch. If I had to nitpick, the patties could’ve been slightly more smashed. It’s a huge burger once you add an egg and bacon (which I did) so it obviously got pretty messy. I would definitely eat this again.
Longanisa Empanada (sharp cheddar, chili garlic vinegar dipping sauce). This is the money. I didn’t know how badly I needed a Filipino, “chopped cheese,” in my life, but I was pretty close to ordering a dozen more for the road. Seriously, next month, try this.
Adobo lemon pepper fries with beer cheese sauce. Obviously fries are fries, but the seasoning was delightful and the San Miguel beer cheese was the perfect drip.
I hope they pair up with a Filipino bakery to start including some desserts, because I was lusting after a sweet treat with how heavy the food was.
I’m excited to see where they end up next!
