Comin' in hot! Belizean style habanero carrot recipe that I concocted from a recipe on the Internet and the ingredients on the back of a "Hot Mamas Belize" bottle. Right amount of heat with flavor.

1/2 onion, chopped
3 garlic cloves, chopped
2 carrots, chopped
1 cup water
10-15 habanero peppers, seeded and fine chopped (more or less seeds based on the heat level you desire.)
1/2 lime squeezed (or 3ish teaspoon of lime juice)
1 cup white vinegar
2 teaspoons sea salt

  1. Sauté garlic in coated sauce pan.
    Once the garlic starts to give off it's aroma, add the onion, carrots, vinegar, and water.

  2. Bring to boil, reduce heat and simmer until the carrots are soft.

  3. Remove from heat. Add habaneros, lime juice and salt to the carrot mixture.

  4. Place in a blender and puree until it reaches a smooth consistency.

  5. Pour into sterilized bottles or jars and seal. Keep refrigerated.
