Attempting to redeem myself with a brisket today
I've done 3. One was decent. The other two, dry but tender-ish
Basically untrimmed
Dry brined 20ish hours
B&b snake on the 26" kept it going for 10.5 hours. Had to build another snake in my 22" ltd to finish the cook. Used a water pan in the 26 which caused the fuel to be consumed faster. Ghetto deflector in the 26
Spritzed twice with beef broth and wash yer sister
