Replace the motor’s capacitor.
When I owned a deli I did this on our prep slicer. I told my employees I would fire them if I caught them doing it. I trust myself not to lose a finger and sue me, I don’t trust anyone else that much.
It’s a beautiful old machine but it needs a start capacitor. Easy as fuck to replace and can usually be found on Amazon
The capacitor is out. That’s a fairly easy fix for the right person. You could probably get it fixed for cheaper than replacing it.

I don’t understand why other gms and chefs don’t just have a tech come out and service the equipment to make it run properly. That service fee and labor of the repair is going to be less money than the eventual lawsuit and medical bills for the person who hurts themselves. My entire crew know the second something goes wrong with any of the equipment call out the service tech for that equipment. I would rather pay a $200 charge for them to say it’s a small thing then thousands of dollars later on

I almost lost my fingertip to one of those. It hit my finger and spun my hand like a can in a can opener. It went around the bone, and I pulled back just in time to save like a quarter of the meat in that spot. I closed my finger like a lid and taped it up. Thankfully, finger tips heal really well, but dude, don’t touch that thing.
This is a health and safety committee issue. If you don’t have them then perhaps the health inspector might be able to intervene in some way…
Hard learned lesson:

I’ve taken these fully apart to clean/service them before, its’ extremely simple. It’d be a good idea to disassemble it and give it a good internal douching. That may fix the problem. If you’re not comfortable, make chef take it somewhere to be serviced.
