I dont know if the crumb looks right but the inside is superrr soft. i followed the recipe I’ll link down below for the small loaf. I did tweak it, I ~ doubled the amount of starter and added more water because it seemed dry. I further tweaked it by adding cheddar and jalapeno! I have no idea what went wrong, but I think it’s unfair to say you followed a recipe but then mention that you tweaked it a lot.
I found that when beginning to learn how to bake sourdough, it is best to follow a basic recipe (so no fancy cheddar and jalapeno) and learn how to handle the dough since it can be tricky.
I’ve learned when I add mix ins it’s during the coiling phase it’s easier than that method. I recognize it since that just did not work well for me lol your not the only one
The crumb looks a bit dense and a little gummy in few places. Getting good results can be tricky with add-ins. If it were me, I might follow a single recipe, with no add-ins, and no tweaks, until I was able to really nail it. It’s hard to get consistent results when you are getting started when you introduce different factors each bake. Your bread looks tasty, enjoy.
I’m still working on perfecting a plain loaf but I’ve made this jalapeno cheddar recipe several times and it always turns out perfect. My family begs for it and fights over it. I used pickled jalapenos, pat them dry and chop them. I buy a block of sharp cheddar and grate it. The dough always feels super tight and I struggle doing stretch and folds. I don’t always get a “pretty ear” but the texture and flavor always turn out delicious! I usually mix the dough around 7 or 8pm, let it rest on the counter overnight then shape it in the morning around 6am. Then I put it in the fridge until I’m ready to bake!
