









Inspired by my fellow onion lovers, I took a notion to caramelise some onions. Inspired by the shit weather my part of the world is enduring this weekend, I decided the best use of them would be some French Onion soup. No regrets on either front.

I do not consider French Onion soup hard work because of how much I love making it. That said, the cleanup stinks.
I always simmer mine with fresh french thyme among other things. If you have the thyme it is worth it.
That color is amazing. Makes my mouth water.
