Just got this takeout but the seaweed looks off/different. It smells ok but if this could make me sick I won’t be taking chances. I thought sushi nori was always dark green but maybe there are other hues? Help!

Not pick, but Nori is Kelp, not seaweed. And yours is fine.

When slightly overtoasted it takes on a light brown color

Different species of nori, qualities, and different ways of processing them result in [different shades of green](https://www.maruko526.jp/topics/index-img/131-2.jpg). [Some types of raw nori is also reddish or purple](https://mblogthumb-phinf.pstatic.net/MjAxODAxMzFfMjIy/MDAxNTE3Mzg4NTYwMTA1.N-J1ljSZaL8TesssbBiJaKL_SfRXEK0vQYKQUu-6-_8g.8E3pDLbt4d71W5OFu1WojtF2f0b_TOIn3p4CRio4KCwg.JPEG.clytiemom/20180131_173814.jpg?type=w800).

Specifically for Japanese sushi-nori, the better quality ones are darker in color (this does *not* apply to Korean nori/gim).

Your Avocado is already going brown – that’s not fresh.
