Dinner’s from the last week! ft first time breaking down whole chickens, and a couple cooking fatigue meals (they can’t all be pretty)

    Whole chickens were on special and breaking it down & using all its parts sounded like a fun activity. I enjoyed the process once I started getting the hang of it, and I like the variety of cuts & additional parts I got to use / have on hand in the freezer (and my dog loves that he gets all the “icky” scraps I pull off the cooked carcass).

    Anyway, this week:

    1: “French onion soup” orzo, sautéed mushrooms & chicken chunks, crispy chicken skins, peas. I used homemade broth in the orzo, scrap chicken chunks from my botch carving job (see pic 3), skins from the breasts, & bits of fat rendered down to fry the skins & sauté the mushrooms/chicken.

    2 & 3: Homemade chicken broth, Mac & cheese (+ breaking down meat for freezer). I did indeed drink a mug of broth on the side of my Mac & cheese.

    4: Korean fried chicken drumstick with honey gochujang sauce, vegetable pancake, quick pickle carrot slaw, white rice (not pictured)

    5: Meatballs & marinara sauce with spaghetti & spinach. Homemade broth made its way into the giant pot of sauce & meatballs I made, of course.

    Then I got sick of cooking / leftovers, so…..

    6 & 7: Saltines & sardines (tinned, in tomato sauce) with cream cheese, hot sauce, bacon & pickles; Banana boat with peanut butter, granola, and a metric ton of chocolate chips. This was one of those nights where i was pacing around in my kitchen during a game intermission, hungry but annoyed with having to feed myself, trying to figure out what I’m craving, can make fast, and avoid creating dishes. It hit.

    8: BLTCh sandwich (bacon, lettuce, tomato, cheese), potatoes with butter/s&p, pickle, bottom of the chip bag crumbles (that made its way onto my sandwich); smoothie with frozen raspberries, strawberries, Saskatoon berries, banana, and spinach. Lunch for dinner type vibe.

    Edit: I will never forgive apple for the incorrect autocorrect in the title. For shame.

    These look amazing! Have you heard of Korean carrot salad? It would go well with your Korean chicken.
