Today I smoked a couple butts for Xmas. I’m no expert but they turned out great!
Seasoned and wrapped overnight then injected with creole butter before putting them on. Blues Hogs, cracked salt & pepper, sugar, brown sugar. Butter & orange juice in the tin. Fat down for an hour then fat up for the long haul. Rotated once.
Put on at 8:40am, 2 smoke tubes, wrapped at 165, let rest for 2 hours once they hit 203. Pulled and bagged at 7pm. Wow those samples were good! Ready for the crock pot Xmas day.

So I thought I was pretty versed in smoking. But is it common to smoke a butt immersed in liquid like this?
