As the title says, I made my first loaf today after a long depressive period. I’m not back to myself 100%, but I got the urge on Wednesday to bake this weekend, so I took Doughlene out of the fridge & up to temp, then gave her a couple of 1:1:1 feeds. She was bubbly & ready to go on Friday, so I started my process (below). I made a few mistakes (ex: forgot to do folds during proofing, but did a few after the 5 hours, started the oven at the wrong temp & had to adjust on the fly), but for not having baked in weeks, I feel really good about this loaf, even if she’s a bit wonky.
Recipe/Process
150g active starter
300g lukewarm water
500g bread flour
10g salt
Mix starter & water together thoroughly, then add flour & salt. Mix until all flour is hydrated.
Leave dough in sealed bowl to proof for 5 hours, intermittently doing stretch & folds every 30 min
After 5 hours, remove dough from bowl & pre-shape. Allow the ball to rest for 5-20 min, then do a final shaping.
Place dough in bowl (use parchment & sprinkle with rice flour to prevent sticking), cover with shower cap/plastic bag and refrigerate at least 8 hours
Baking: preheat oven & Dutch oven to 450° for at least an hour.
Remove dough from fridge & flip onto sling or parchment paper. Using lame, score a vent line and any other decorative pattern preferred. After heating oven, place sling in DO & replace lid. Bake for 20min. After time, drop heat of oven to 400° and bake, uncovered, for 40min.
Remove from DO & cool on baking rack for at least 1 hour, but the longer the better.

Beautiful loaf. I’m glad you are feeling a little better and I hope you feel even better.
I get it 110%. In my “neutral” MDD season, I’m able to bake like a mad woman. But in my “low” seasons, gosh, it feels like scaling a mountain.
