Hi everyone!

As promised, here is my second attempt at the Sally Christmas sugar cookies, this time using a food scale for the ingredients. The last pic is from my first attempt/post last week. The difference!

WOW. Y’all weren’t kidding how weighing changes lives. I loved it! I tested my old method of measuring a cup of flour with my usual scoop directly from bin and press against the side versus the pour a little at a time into a bowl. I used the King Arthur measurement chart for weighing and my old method was almost DOUBLE the amount that one cup is supposed to weigh🫠 very humbling but also so exciting to bake going forward with more accuracy.

These cookies turned out SO light, SO fluffy and the dough was completely different this go round. Thank you all for your help and solving this mystery. And shout out to the commenter who told me how to quickly get items to room temp. My baking adventure continues!

    I made cookies today too and they spread so much I immediately put them in the fridge. I told my boyfriend, it’s on Reddit, the dough needs to chill.

    If you weigh by volume you can’t press against the side. Use another cup to scoop and then dump into your measuring cup. Don’t compact it at all. Fill it until it’s heaping and then use the back of a knife to gently level it and push off the excess. If you were pushing against the side or pressing it down in any way, then of course you’re using way too much. If you’re meant to press it down and fit as much as possible it’ll be listed as a “packed” measurement, such as a cup of packed brown sugar.

  10. Just out of interest why did you use the KA measurement chart? I’m pretty sure Sally gives her quantities in both cups & grams, doesn’t she?

    I started making pasta dough and must have gotten lucky the first 2 times. The third and fourth, the dough just was so hard unusable. I started using a recipe with weights instead, and the difference is just amazing. I’ll never go back to “cups of flour”.
