It depends on the quality of the mayo. The original Japanese version of Kewpie mayo, heck yeah! Best Foods mayo? Barf. Of course butter gives a grilled cheese part of its classic flavor, so I’ll take good butter over great mayo any day.

I use it primarily, because of spreadability and convenience. It has a nice tanginess, and it doesn’t get absorbed by the bread. Its lighter and brings out the breads texture and the flavor of the cheese. Might try butter again if i have some on hand that’s not too cold and unspreadable.

Mayo on the outside for a lovely bitter crust is what I’ve seen top chefs do on tv. Inside is a bit much.

My boyfriend does. I thought the whole idea was weird, and I don’t really care for mayo. To my surprise, grilled cheese made this way is delicious.

Butter is great. But I often don’t have enough softened and it is a bit greasier.
Mayo is easily spreadable and lighter while not really impacting flavor in a negative way.
