So I made “meatballs” from halloumi

it might not be for everyone, but I accidentally made halloumi meatballs tonight. I had searched for a halloumi meatball recipe but didn’t find anything I wanted so I thought I’d just wing it.

I used a cookie cutter to get the halloumi into a small circular shape (the same I used for potato fondants) – I then put in a bowl of olive oil then a bowl of breadcrumbs (Panko breadcrumbs, vegeta, oregano and basil, plus salt and pepper). I put in the fridge for 30 mins. Then I mixed tomato paste with hot water and oregano to replace the olive oil mix. And I mixed the breadcrumb mixture with normal breadcrumbs. I then put the halloumi into the tomato mix, then into the breadcrumb mix and squeezed in my hand to form a meatball shape. Dipped back in tomato mixture, finally with breadcrumbs and then cooked on medium high heat for 4 mins each side.

It’s not my normal meatball recipe but for any halloumi fans you might find it useful.

    What brand halloumi have you found that doesn’t use rennet?
