salt and pepper on both sides for seasoning,
seared in a hot pan with butter for 2 mins each side, basting butter along the way.
Rested for 5 mins before cutting open.

I was surprised when I opened it it was almost fully cooked! Maybe i’ll try 1m30 on each side next.

    High heat get the pan hot then put the steak in make sure the pan is hot then lower the heat

    japanese beef is supposed to be cooked like this, the fat needs more heat to render and it doesn’t really get overcooked in the same way an american steak would. This looks perfect.

    You nailed it. I wouldn’t go less on the temp. The fat needs to melt for that silky texture.

    Best way I have found for Wagyu is sous vide 2 hours at 50c, then a quick sear on a blazing hot cast iron. Thick cuts of Wagyu are just too oily for my tastes.

  11. Try withholding any extra fat next time, let it cook simply in its own fat.

    Id only use butter for basting. Better to use a high smoke point oil (l like avocado oil) for searing. Butter will burn and make the steak not taste as good

    It’s a pretty good medium. A gentler heat would’ve allowed for medium rare and deeper red but it looks really good!
