I switched from a normal sad kitchen to jersey mikes and the lack of fryer makes my life better. Still get plenty of cuts and small burns but I’m not breathing in fryer oil or carrying that smell with me.

Accidentally dipping a knuckle in fryer oil is the fucking worst. You don’t realize how much you bend your fingers until one of your knuckles is deep fried.

Have deep fried my hand before. It was not pleasant. Still stayed to finish dessert service tho.

Was searing chicken last night and one of my line cooks goes “why are you stand so far back? Just drop the chicken in the pan?” I told him that the chicken skin will sometimes get hot oil until it and POP! You don’t want to be in that area when it happens. As I say it, there was a massive POP and it went towards the oven (thank god) instead of all over us. I look at him and say “this is exactly what I was talking about. Hot oil ain’t no joke!”
