Does anyone know where in the US I can get sliced pork just like the Ichiran ramen restaurant (I’m in Texas near Houston)?

If you mean for your own ramen Costco, a local butcher, wild fork if you have one, or any Asian grocery store will have pork belly. You want a full slab, if the skin comes with it no big deal it’s pretty easy to slice off.
Pork shoulder will work as well, but will just have less fat and might not be what you’re looking for.

Your local butcher should be able to help you. You’ll have to locate a meat market as grocery stores don’t usually have butchers anymore.
Don’t think Ichiran uses pork belly. Most likely pork shoulder/butt, available at your neighbourhood Kroger.
Either they simmer it in the broth at low temperature or they sous vide it with some seasoning (salt, sugar, sake, mirin, soy).
Do not cut it while it’s hot/warm. It needs to be cooled completely in the fridge before you cut. The slices are then added to the hot broth to reheat.
I personally would cook it to medium – medium/well. The heat in the soup will cook it a little more a la shabu/hotpot.

you’re in houston there are so many big asian markets and all the Michoacana meat markets carry it too if you need a more in depth list let me know

Seiwa and Daido are additional options if you want Japanese chashu pork. They both have pre sliced cooked pork in the freezer section that just needs to be defrosted and dropped into a bowl of ramen

On their official website they state that The normal ramen uses pork loin while the Kamadare uses pork belly.

It’s clearly ichiran and they 100% use pork shoulder not pork belly.

If you’re near a Trader Joe’s also they sell pre cooked pork belly. I cut off a slice and do a quick sear in a pan with some soy sauce and put it on ramen. H mart would be a perfect place to check tio

That is pork butt/shoulder.
It was cooked in the tonkotsu broth or boiled separately.
The meat is sliced when cold, or else it would have fallen apart if sliced when not cold.

It’s pork shoulder. It’s boiled in water first to remover impurities, then cooked on a low simmer with green part of the onion, kombu, garlic, mirin and sake.

Have some of their ‘instant’ ramen my brother got me from Japan and wow did I find it tasty.

I worked at ichiran in NYC, pork comes precooked, prozen and sealed and we literally just boil it in its packaging and serve.
