  2. Shredded parmesan has a coating on it that makes it not melt. This is so that the bits don't clump in the container. If you want parmesan to melt and can splurge a bit, get some Parmegiano Reggiano. It will only come in wedge form so you will have to shred it yourself. It does taste different than the shredded stuff (anything that isn't explicitly Parmegiano Reggiano is fake) so it may still not be great for this but maybe you'll love it. One way to find out lol

  5. American "Parmesan" is not the same as D.O.P Parmigiano-Reggiano or the parmesan found in Europe. Even if you get the American Parmesan that's not pre-shredded, it still won't melt like actual parmigiano-reggiano, actual parmigiano turns creamy the stuff you used melts like mozzarella.
