    Looks like you may have seared too long. Make sure to pat the steaks completely dry first so they make clean contact with the skillet (or whatever cookware) because any moisture will make steam that has to go away before you get a good crust/sear.

    Honestly pretty solid for first time. Ice baths or even just resting in general for like 10 mins lets you have more time in the pan for searing before overcooking the inside. Keep at it! Part of the process of perfection is eating great food along the way.

    Not bad! I’d do another hour, and then make sure you get it nice and dry before searing. A combination of paper towel pat down and a few minutes on a wire rack in the fridge work great, but even if you just dry it really well on the cutting board it’ll be fine. Ghee might not be the best choice for a sear, you want something that can get nice and hot. I use avocado oil. That way, because it’s so hot, it doesn’t need to be in the pan for long.

    Did a ribeye tonight at 134° for 2.5 hours. Tried an ice bath for the first time and I’m sold. Juiciest steak to date.
