Cooks up in a quarter of the time of beef, and the veg and sauce alone are just 200 kcal. I added some herbed mashed potatoes to bring the total up to about 350 per portion. And let me tell you, this thing slaps. That's lunch sorted for the week for me and the wife!

Recipe for 6 portions:
18 oz white button mushrooms
3 large carrots
3 ribs celery
10 boiler or 20 pearl onions
Garlic and thyme
32 oz beef broth (swap this for veggie to make it vegan!)
1 cup red wine, preferably dark like a cab sauv
2 tbsp flour
2 tbsp tomato paste
Splash of oil
For mash:
6 large gold potatoes
1 tbsp butter
1 bunch parsley
1 cup Fairlife fat free milk
